Like our earlier offering of Avalonia, the base for Plum is a blend of various wine barrel-aged, mixed-culture fermented beers that had been resting since summer 2017. We transferred that blend onto 550 lbs. (~3# per gallon) of halved and pitted Italian Plums. Following a period of re-fermentation on the fruit we packaged the beer in early November (and allowed for yet another re-fermentation in the bottle).
